Yes, one week is enough for a strong Oman trip, but not for all of Oman. Keep it to Muscat, Nizwa, the mountains, a wadi and perhaps one desert night; let the south and far north go unless you have more time.

What does not work is treating Salalah or Musandam as harmless extras. Both can be wonderful, but they change the trip from a clean loop into a distance problem. The mistake is not ambition; it is making every day answer to the car.
